In order to respond our customers’ requests, we introduced the integrated production system, in which management from production to processing is carried out within our company. Yanoen’s foundation of manufacturing is to strive in "delivering the finest tea products". In order to meet the demands of our customers, we believe it is essential to keep our in-house production consistent so that we can increase our tea sales, produce safe and secure goods, while making quality improvements. From tea-leaf purchasing, to manufacturing and processing, our main theme is to strive to work consistently at our company. Using the latest production equipments allows us to work under a clean environment. We regard the importance of communication between tea farmers, and to respond to suggestions about tea sales to meet the demand of tea markets in Japan. We listen to our customers, and clients even when they request for something different. We try our best to take in new point of views by using Yanoen’s original tea producing technique.

The tea’s charasteristics of "shape",“fragrance”, “color”, and “flavor” differ by tea farms. When cultivating, farmers consider the climate and soil carefully. The tea of Yanoen, the birthplace of green tea, is sustained by the Surroundings of Ujitawara’s grace of nature and we deliver fine quality-flavored and locally grown tea with passion.

Ara-cha Manufacturing

The producer harvests tea leaves and produces Ara-cha.

Ara-cha means rough, unrefined tea, in which harvested tea leaves are steamed with vapor, and is heated, rubbed and crumpled (excluding Hikicha tea), and then it undergoes a drying process.

The careful testing of tea leaves is carried out by Yanoen’s skilled tea masters. When performing the testing of Ara-cha (unprocessed tea), the goal of the tea masters is to carefully look at “leaf shape”, “leaf colors”, “tea color”, “fragrance”, and “flavor”. This process plays an important role in presenting Yanoen’s tea flavor.

We first test Ara-cha before purchasing the tea to replenish our stock.
One can keep its natural flavor or blend teas in accordance for different use and purpose. In order to bring out the best flavor of the leaves, the combination of ""shape"", ""smell"", ""color"", and ""flavor"" of various tea leaves is necessary to determine the right balance of the blend, while considering each of their characteristics; this requires exceptional skills. We seek the best flavor using skills that have been cultivated from a long history and is derived from those who are well-trained, and experienced in the five senses.

We establish equipments for sanitation, conduct quality and quantity management, and purchase teas that have been chosen by the tea dealers.

For High Quality Flavor

We develop plans for production at the time of purchasing the tea leaves, to ensure that there is no time lag upon its delivery arrival to our company. In order to maintain the freshness of the purchased tea-leaves (Ara-cha), we conduct the vacuuming process as soon as possible and store them into our refrigerators.

Under the strict quality management, we produce Yanoen’s original tea with the latest equipments and machinery.

We proactively verify the tea’s "shape", "color", "flavor", and "fragrance" under the processing stage and make efforts to reflect it on our products. Furthermore, we are able to develop various high quality products under the environment. Ara-cha is a mixture of old leaves, stem, bud, powder and so on. The uneven grain size refer to a relatively higher moisture content, thus making it possible to be stored for a long time. The extension of its storage capacity, as well as the maximization of its tastiness is achieved through our ‘Manufacturing and Processing’ phase. The following is the basic process: place the Ara-cha into the fire, sieve and cut the leaves to adjust the shape of the tea leaves, sort the main tea leaves, stem, and powder through wind winnowing and color-sorting, and finally combine the sorted tea together.

Staffs make themselves neat and clean in the locker room. They brush their entire clothing with a sticky roller, wash and sterilize their hands. Afterwards, they take an air shower before entering into the processing room.

Maintaining quality of products in the refregerators of our company

We have six of our own refrigerators, and we also use refrigeration services (through contract) to store our products. This allows us to continuously preserve freshness and maintain the quality of our product.

We use barcodes to find the location and the quantity of tea leaves that are in storage thorughout our company in a timely manner.

Adjusting Freezer & Refrigerator Tempratures

In order to maintain the fine quality of our teas, we carefully control the freezer and refrigerator tempratures for each kind of tea leaf. Vacuum storage also allows the quality of the tea to stay fresh, and protects it from oxidation.

We ship our products after double inspecting our goods, which includes a primary inspection by the product manufacturers, and a secondary inspection by those in charge of the prior to shipping inspection.

2.Safe Production



Traceability Management

We issue barcodes, containing ingredient and tea product information, which is then placed during arrival, and manufacturing time, before the supplies get stored in the in-house refrigerators. By doing this, we are able to know in a timely manner, the storage location and quantity of a specific tea product at any given time and it ensures a secure, and stable supply of production. Our tracebility system can confirm "by whom", "when" and "how" teas were produced.

Hygiene Management

Based on the manual, we follow thorough hygiene regulation. Using an easy-to-follow and reliable manual, we conduct dress code inspection, and air showering prior to entering the production rooms. In addition, we strive to create an environment, where we regularly conduct maintenance of factory equipments, and factory cleaning, in order to deliver safe and secure products to our customers.

Sensory Evaluation & Quality Inspection

We set up an examination room to inspect for coliform bacteria, general viable bacterial count, heat-resistant bacteria, mold, and fungi, to ensure the safety of the product. We also conduct quality control using machines that can examine the components of the tea, or measure the spectral color difference, as well as the grain size. In addition, the president, chairperson, and along with the tea masters discuss and carry out sensory inspections for the essential quality of important teas on a daily basis.
